ST. PAUL, Minn. -- Ellen Joseph joins Kare 11 News Saturday live at the Minnesota State Fair to share her award winning Sugar Plum Cookie recipe.
Sugar Plums
6 oz semisweet chocolate chips
1/2 cup sugar (+ extra for coating)
1/4 cup light Karo corn syrup
1/3 cup dark rum (+ extra for soaking raisins)
2 1/2 cups finely ground vanilla wafers
1 cup toasted pecans, finely ground
50 golden raisins (soaked in extra rum)
Melt the chocolate (double boiler over simmering water works best). Stir in sugar, Karo corn syrup, and rum. Stir in the wafer crumbs and nuts to make a paste-like mixture. Roll mixture into 1-inch balls with raisin in middle. Roll in additional sugar and place each ball into individual paper candy cups. Store in airtight container. Makes about 4 dozen.
