Chef George Snyder joins us today to share a few recipes from Pazzaluna, one of the restaurants participating in this year's St. Jude Children's Research Hospital benefit.
Pasta Risotto Milanese
Ingredients
2 fl. oz. pomace olive oil
4 fl. oz. Chicken Stock-Batch
4 fl. oz. Saffron Tea Batch
1 oz. parm grated cheese
0.12 tsp kosher salt
0.12 tsp black peppercorn
7 oz. Risotta Par-Cook Batch
2 fl. oz. white kitchen wine
4 oz. chicken pieces
1 oz. unsalted butter
0.01 oz. dried parsley
1 oz. asparagus
1 serving bread factor batch
1. Using a sauté, over moderately high heat, begin to sear the chicken in the olive oil seasoning with salt and pepper.
2. Once chicken is brown, deglaze pan with saffron tea and add chicken stock, bring to boil.
3. Add rice, stir often. Cook until liquid is 2/3 gone, then add asparagus pieces and mix well.
4. Add butter and cheese, stir well to incorporate. The risotto should have a creamy texture.
5. Adjust seasoning to taste
6. Serve in warm pasta bowl.
Saffron Tea
Ingredients
½ oz. saffron thread
2 gallons water
1. Combine and simmer
2. Cool, and store in cooler
Risotto Par-Cook
Ingredients
18 lbs. Arborio rice
6 ea. Yellow onion
4 tbsp. chicken base
2 quarts pomace olive oil
1 box white kitchen wine
2 lbs. unsalted butter
10 quarts of water
1. Using 2 rondos over medium heat, sweat onion in butter until translucent, then add rice and toast lightly.
2. Split the wine between the two, as well as the chicken base, stir constantly until wine is almost completely absorbed in the rice.
3. Add water in 3 different stages, splitting the water between the two rondos, once all water is incorporated.
4. Divide risotto on sheet pans in a thin layer and place in cooler to cool.
