'Comedy Kitchen' at Acme

GOLDEN VALLEY, Minn.--  Acme Comedy Company is celebrating its 20th anniversary this November is a huge way.  Not only do they have 20 national headliners performing November 3rd - 5th, theyr'e also holding a Comedian Cooking Charity Contest called "Comedy Kitchen", with proceeds benefiting Fraser.

Comedians Mary Mack, Chad Daniels, and C Willi Myles shared their favorite on-the-road recipes with professional chef Vincent Francoual from Vincent A Restaurant and showed him how they cook at a long stay hotel. Chef Vincent then reworked and tweaked the recipes, went shopping with the comedians, and taught them the new recipes.

During Acme's anniversary week, the three new dishes will be added to the menu, and for each dish sold, 20% of the proceeds will go directly to charity. The comedian's dish that sells the most will have a donation for $5000 made to Fraser in his/her name.

Chicken Asian Rice Noodles 

Sprouts
Spinach: 1 head
Lime: ½
Peanut Oil: 2T
Rice Noodles: ½ package (8oz)
Chicken Breast: 1 diced
Corn Starch: 1 T
Crushed Red Peppers: a pinch
Soy Sauce: 2T
Leek: 1 Chopped thin
Garlic: 2 cloves Minced fine
Cayenne Pepper: 1 Minced fine
Cilantro: 1 Cup Upper leaves
Fish Sauce : 2T
Broccoli: small crown (Tips broken off)
Sugar: 2 TSP
Peanuts :(1/4 cup) Crushed
Roman Tomatoes: (3) Sliced

Put Rice Noodles in Pan of boiling water. Turn off. Marinate Chicken in corn starch, red pepper, soy 10 minutes, remove noodles when soft, rinse in cold water. Heat peanut oil til smokes, drain chicken. Sautee till browned add broccoli, leeks, pepper, garlic, sugar, fish sauce, tomatoes, noodles ½ cilantro, squeeze lime wedge, spinach and toss. Garnish with peanut, sprouts, and the remainder of the cilantro.

Penne Pasta with Turkey Italian Sausage, Tomato & Mascarpone Cheese

Brown Sugar: ½ TSP
Crushed Red Pepper: ½ TSP
Grated Parmesan: ¼ Cup
White Wine: ¼ Cup
Fresh Basil: 2 Stalks
Mascarpone Cheese: ½ Cup
Penne multi grain pasta
Zucchini
Salted Pork: 1/8 lb, fat removed, diced
Crushed whole Tomatoes: 1 can
Onion
Eggplant: ½ diced
Extra Virgin Olive Oil: 2 TSP
Garlic: 2 cloves, sliced
Turkey Italian Sausage: 2 links, sliced 1 inch
Tomato: 3 diced

Sauté onions and salt pork. Add garlic slices. When browned lightly, add sausage, salt, brown sugar, eggplant, and zucchini. Add fresh tomatoes to crush can tomatoes. Deglaze with white wine, pinch crushed red pepper. Cover and simmer while pasta cooks. Add sugar and pasta to ½ sauce, stir, add cheeses. Add the rest of the sauce, garnish with fresh basil.
