MASCARPONE-STUFFED DRIED APRICOTS
1 (8 oz.) container Crave Brothers Mascarpone, room temperature
2 tbsp. yuzu marmalade (or orange marmalade)
16 dried apricots, slit with a paring knife
¼ cup candied pecans, crushed with the flat end of a chef's knife
In a small bowl, stir together mascarpone and marmalade. With a spoon, or a pastry bag, fill each apricot with approx. 2 tsp. of the cheese mixture. Refrigerate, covered, 8-24 hrs. One hr. before serving, press the crushed pecans onto one end of each stuffed apricot.
Amount: 16 apricots.
Good to Know:
· Find yuzu marmalade with the accompaniments in the Imported Cheese Department.
ROSEMARY, DATE & Prosciutto PIZZA
1 Manoucher Rosemary and Onion Bread
3.5 oz. soft goat cheese
5 dried, pitted Medjool dates, chopped
1.5 oz. sliced prosciutto, roughly chopped
1 ½ tsp. finely minced fresh rosemary
2 ½ tsp. Kowalski's honey, gently warmed in the microwave
Smear chunks of cheese on the bread, leaving chunks in a rustic fashion; scatter dates, prosciutto and rosemary over the cheese, pressing dates into cheese to help them adhere. Bake in a preheated 425° oven (preferably on a baking stone) until cheese is melted and bubbly (7-9 min.). To Serve: Drizzle with warm honey and cut into wedges.
Serves 8.

TIRAMISU CUPS
¾ cup superfine sugar
½ cup mascarpone cheese
½ cup heavy whipping cream
1 tsp. vanilla
1 tsp. instant coffee
6 Mona Lisa Marbled Chocolate Dessert Cups or similar chocolate dessert cups
- Stonewall Kitchen Mocha Espresso or Dark Chocolate Toffee Sauce, warmed gently in the microwave just to drizzling consistency
- cocoa powder and crushed chocolate-covered espresso beans for garnish
Using an electric mixer in a medium mixing bowl, beat together first 5 ingredients until sugar is dissolved and mixture is light. DO NOT OVERBEAT. Spoon or pipe mixture into chocolate cups. To Serve: Drizzle cups or serving plates with sauce; dust with cocoa powder and sprinkle with coffee beans.
Serves 6.
