GOLDEN VALLEY, Minn -- Parmesan Crusted Halibut is on the menu for tonight's Backyard BBQ. Sam Giannakakis from Eden Prairie is grilling it up.
Halibut Steak
Asparagus
Rosemary
Sea Salt
Pepper
Olive Oil
Parmesan Cheese
Preparation:
Cut Potatoes in to small cubes and place in Tin Foil. Spray with olive oil, add a pinch of salt , pepper and rosemary. Close tin foil and place on top rack of grill for 45 minutes.
With 10 minutes left on the potatoes, start preparing the Halibut and asparagus. Rinse the asparagus and cut off ends. Place on the grill directly with a temp of about 400 degrees spray with olive oil and add a pinch of salt.
Take a Halibut steak spray lightly with olive oil and place directly on grill face down. Leave on for 5-6 minutes depending on thickness. Roll over and grill an additional 4-5 minutes than add Parmesan cheese on top of fish for the last minute of cooking.
Remove Asparagus and place on plate , than remove Halibut and place directly on Asparagus bed. Finally open the package of baby reds and add as the side dish to fish.
