GOLDEN VALLEY, Minn. -- Kevin VanDeraa of Cupcake and winner of Food Network's Cupcake Wars joined KARE Saturday in studio to share his banana cupcake recipe.
Ingredients:
- 4 oz. bananas, pureed
- ¼ cup sour cream
- 5 1/3 oz. cake flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- Scant ¼ teaspoon nutmeg
- 1 1/3 oz. butter
- ½ cup sugar
- ¼ cup light brown sugar
- 1 egg
- 2 teaspoon vegetable oil
- ½ teaspoon vanilla
Instructions:
Cream together the butter and sugar. Slowly add the eggs, oil, and vanilla. Alternately add in the sifted dry ingredients with the banana sour cream mixture.
Bake at 325 degrees.
Cream cheese frosting recipe:
Ingredients:
- 4 oz. butter, room temp
- 16 oz. cream cheese, room temp
- 1 teaspoon vanilla extract
- 6 oz. powdered sugar
Instructions:
In a large mixing bowl of a stand mixer beat the butter to soften, add the cream cheese in bits about 2 tablespoons at a time, scrape down the bowl and mix on medium until fully combined. Add the powdered sugar, mix until incorporated, mix in the vanilla.
