Minnesota Spam breakfast pie

GOLDEN VALLEY, Minn. -- 2011 Minnesota State Fair Spam winner Megan Turak of Minneapolils is hoping to serve up another award winning dish. She came to the KARE 11 kitchen to make her Minnesota Spam breakfast pie recipe.

Minnesota SPAM Breakfast Pie

2 3/4 cups flour
1 1/2 sticks butter
4 ounces sharp cheddar cheese, shredded
pinch of salt & pepper
2 egg yolks, divided
4-6 tablespoons chilled water
1 (12 ounce) can SPAM
8 ounce cream cheese, softened
1/3 small onion, chopped
4 eggs

Measure out flour into a chilled bowl and rub in butter until the mixture has the appearance of bread crumbs.

In a separate bowl, mix the cheese, salt, pepper, one egg yolk, and water.

Add to the flour mixture and refrigerate for at least 30 minutes.

As the dough cools, prepare ingredients by slicing SPAM into 1/2 inch slices, chopping the onion, preheating the oven to 400 degrees F, and lightly greasing a pie dish. Roll out chilled dough to slightly less than 1/4 inch thick.

Line the bottom of the pie dish and save excess for lid. Layer the SPAM on the bottom of the pie, shaping it to cover the bottom.

Spread cream cheese over the top of SPAM.

Sprinkle onions over the cream cheese.

Crack and spread four eggs on the top layer and crack the yolks.

Cover the pie with a layer of dough and close lid. Use any extra dough for decorating the top of your pie! Brush the pie with an egg yolk.

Bake for 30-35 minutes.
