GOLDEN VALLEY, Minn. - Don't cheat on your sweetheart, but you can cheat on making dessert. Our favorite foodie and adventurer Beth Dooley from Wilderness Inquiry shared one of her easy desserts to make.

Chocolate Mousse

Serves 2

1/2 cup good quality semi-sweet chocolate chips (or chopped chocolate)

1/2 cup creme fraiche

1 tablespoon rum or spirit of choice

1/2 cup heavy cream

In a small saucepan set over low heat, melt the chocolate. Remove and cool slightly. Turn the creme fraiche into a medium bowl. Stir the melted chocolate into the creme fraiche along with the spirit.

In a separate bowl, whisk the cream until it forms stiff peaks.

Gently fold the whipped cream into the chocolate mixture. Turn into two glasses or a serving bowl. Refrigerate or freeze until ready to serve.
