PLYMOUTH, Minn. - The growing popularity of microbrews may be the Twin Cities hottest trend for 2012...and one local chef is serving up some perfect pairings for the brews.

Eat Shop Beer Mussels

3/4 lb. Prince Edward Island Mussels
1 tbsp. butter
1/2 tsp. chopped garlic
1/2 tsp. chopped shallots
2 oz. chopped bacon
2 orange slices
10 oz. Big Island Blonde Ale
pinch salt
black pepper
1 tbsp. butter

Over medium high heat, saute the butter, garlic, shallots, bacon, orange slices, and mussels until the mussels begin to open. Add the beer, turn the heat down to medium and let simmer until all of the mussels have opened up, season with salt and pepper and add the second chunk of butter. Pour the whole mess into a large bowl and garnish with chopped parsley, fresh chopped shallots. Serve with crusty bread for dipping.
