GOLDEN VALLEY, Minn. - From garden to ballpark, it's not all burgers and brats at Target Field. If you know where to look, you can score some healthy eats and it's all served up by some pint sized vendors.

Roots for the Home Team partners with youth garden programs in ethnically diverse areas of the Twin Cities. Using their produce grown as ingredients, and their inventive nature to help develop the recipes, together we sell delicious salads at Target Field on Minnesota Twins' weekend home games.

PaLyEsai Greek Salad

Makes 8 (generous 1-cup) servings
SALAD
¾ cup uncooked freekeh or bulgur wheat
2 cups chopped orange or yellow bell pepper (2 medium)
2 cups chopped plum tomatoes (3 medium)
½ cup finely chopped red onion
½ cup finely chopped banana or Anaheim chile
1 can (15 ounces) garbanzo beans, rinse and drained (1-3/4 cups)
1/3 cup chopped fresh flat-leaf parsley

DRESSING and GARNISHES
1/2 cup Salad Girl® Lemony Herb Organic Salad Dressing
4 cups chopped Romaine lettuce or mixed baby salad greens
1 cup (4 ounces) crumbled feta cheese

DIRECTIONS
1. Cook freekeh according to package directions. Rinse in cool water; drain well.
2. Meanwhile, mix bell pepper, tomatoes, onion, chile, beans, and parsley in large bowl. Stir in cooked freekeh and dressing.
3. Spoon salad over greens; sprinkle with cheese.
