Zucchini Pasta Salad

Serves 8

All you need:

1 pkg Hy-Vee Short Cuts zucchini noodles (or 2 – 3 zucchini squash spiralized)

½ cup red bell pepper, chopped (available in Hy-Vee Short Cuts)

½ cup yellow bell pepper, chopped (available in Hy-Vee Short Cuts)

½ cup red onion, chopped (available in Hy-Vee Short Cuts)

½ cup feta cheese, crumbled

2 oz sliced salami, quartered

¼ cup Italian salad dressing

All you do:

1. Combine zucchini noodles, red and yellow bell pepper, red onion, feta cheese and salami in a large bowl. Cover and refrigerate for 20 minutes.

2. Just before serving, drizzle with Italian salad dressing; tossing to coat.

Tip: Zucchini noodles contain extra moisture – pat dry with a paper towel prior to incorporating into the salad. Cut prep time down by purchasing pre-chopped vegetables in your Hy-Vee Short Cuts section.
