Beth Dooley shows us a Valentine's Day recipe: 'Beautiful Steak Diane for Two.'

GOLDEN VALLEY, Minn. — James Beard Award winning Chef and cookbook author Beth Dooley joined us to serve up cupid approved Steak Diane for Two which might be a perfect meal to celebrate Valentine's Day. 

Beautiful Steak Diane for Two

2 4-ounce tenderloin steaks (fillet mignon)

Salt and pepper

1 tablespoon butter

1 shallot, minced

2 teaspoons Dijon mustard

Shot of Worcestershire

1/4 cup whole milk yogurt

Lemon juice to taste

chopped parsley for garnish

Flatten the fillets with the back of a skillet and season with salt and pepper. Set the skillet over medium-high heat, melt the butter and sear the steaks on both sides until just browned, no more than 2 minutes per side. Remove the steaks to a platter and cover to keep warm.

Add the shallot to the pan and cook, stirring until tender then stir in the mustard, the Worcestershire, and then wish in the yogurt and lemon juice to taste. Return the meat to the pan and turn cooking until its done (about 125 degrees on an instant read meat thermometer). Remove the meat to individual plates. Whisk the lemon juice into the sauce and adjust the seasoning. Spoon the sauce over the meat and garnish with the parsley. Serve with boiled new potatoes.
