Biscuit recipes from Top Chef contestants

We're making biscuits with Top Chef contestants in this week's KARE in the Kitchen.

Two Top Chef contestants are in Minneapolis to do a "Dueling Biscuits" event at the Handsome Hog Thursday.  But first they stopped into the KARE 11 studio kitchen to join Sven Sundgaard and Alicia Lewis to share their biscuit recipes.

Poppy Seed Biscuits - Sara Bradley

INGREDIENTS:

2 C. AP Flour

1 tsp. sugar

1 tsp. salt

1 TBSP. Baking powder

8 TBSP. Cold Butter, Cubed

3/4 C. Milk

1 tsp. poppy seeds

flake salt and black pepper

1 TBSP heavy cream

DIRECTIONS:

1. Combine flour, sugar, baking powder & salt

2. Mix with hands to get out lumps

3. Add butter using a "church fold". Rub hands together with flour and butter in palms, smash and stretch butter. Long flat pieces of butter is the end goal. Do not overmix the butter. 

You don't want pieces to be too small.

4. Slowly add milk to the dough. Keep folding it over itself. Do not knead or squeeze the dough to incorporate milk. Add a little extra milk if needed.

5. Roll out the dough onto a lightly floured surface. Aim for 1 inch thickness, cut biscuits to desired size. 

6. Arrange on a baking sheet and lightly brush with heavy cream. Sprinkle poppy seeds, salt and pepper. 

7. Let sit in fridge for 30 to 45 minutes.

8. Bake at 350 degrees for 15 to 25 minutes or until golden brown & done inside. Cooking time varies depending on the size of the biscuit you make.

Buttermilk Biscuits - Kelsey Barnard Clark

INGREDIENTS:

2 1/2 C. AP Flour

1 TBSP Baking Powder

1 tsp kosher salt

1/2 tsp sugar

8 TBSP Frozen Butter, Cubed

1 C. Buttermilk

1 Egg

DIRECTIONS:

1. Combine all dry ingredients in a bowl. 

2. Cut butter into tablespoon pieces.

3. Incorporate butter into dry mix with your hands until the butter is the size of peas.

4. Add buttermilk until just combined.

5. Roll out on heavily floured surface an inch and a half thick. Cut biscuits with empty soup can.

6. Brush with egg then bake at 400 degrees for 20 minutes.
