EXCELSIOR, Minn. — Excelsior Brewing Company features a food truck that uses the brewery’s famous selection of beers as an ingredient in most of its food items.
While the BrewGrub Truck usually stays put at the brewing company in Excelsior, Minnesota, it will gain a lot of traction Oct. 4 and 5 when the brewery hosts its Oktoberfest event. Festgoers will find live music, German food and the truck’s beer-crafted eats.
One unique beer-infused menu item is the brewery’s salmon cake sliders. The salmon is poached in Excelsior Brewery’s Dragon Fruit IPA and served with a truck-made roasted red pepper aoli.
Recipe for salmon cake sliders:
8-ounce salmon filet, skin on
1/4 cup mayo
1 egg yolk
1 T diced green onion
2 tsp dill
1 tsp each: Lime juice, Worcestershire, Dijon
Dash Tabasco and salt
1/2 cup panko
Slider buns
Tomato
Avocado
Lettuce
Roasted red pepper aoli
