Pear-Fennel Salad

Serves 8

All you need –

Dressing:

2 tbsp aged white balsamic vinegar

1 tbsp honey

1 tsp Dijon mustard

¼ cup extra virgin olive oil

Salt & pepper to taste

All you need –

Salad:

2 cups arugula

2 cups spinach leaves

2 cups thinly sliced fennel

¼ cup chopped red onion

4 Bartlett or Anjou pears, cored and cut into wedges

¼ cup walnuts, coarsely chopped

¼ cup crumbled blue cheese

2 tbsp pomegranate seeds

All you do:

1. Whisk together vinegar, honey and mustard for vinaigrette. Add oil, whisking constantly. Season with salt and black pepper to taste. Set aside.

2. Toss together arugula, spinach, fennel and red onion in a bowl. Spread mixture onto a serving platter. Arrange pear wedges, walnuts and cheese on top. Sprinkle with pomegranate seeds and serve with vinaigrette.
