GOLDEN VALLEY, Minn. - Halloween is almost here, and that means candy and sweets galore. But if you're looking for some healthy, fun snacks for your kids, look no further!

Silly Apple Bites

Original recipe from Fork & Beans.

Ingredients:

  • 2 green apples
  • Sunflower butter
  • 32 sunflower seeds
  • 2-3 strawberries, sliced
  • 1-2 homemade googly eyes per apple bite

Instructions:

  • Cut the middles out of each quarter of the apple to create a mouth.
  • Coat the inside of the cut gap with a filling of sunflower butter.
  • Put four sunflower seeds on the top of the “mouth” for the teeth.
  • Put one sliced strawberry inside the mouth for the tongue.
  • Stick each eye above the mouth with a dab of sunbutter.

Monster Mash Toast

Original recipe from Vegan Chow Down.

Ingredients

  • 2 pieces of bread
  • 1 ripe avocado
  • 1 large sheet of toasted dried seaweed or 2-4 small sheets
  • 1 small vine ripened tomato
  • 4 black olive slices
  • 5-6 pretzel sticks for bolts at neck and nose
  • 4 small cubes of vegan cheese
  • Salt and pepper

Instructions

  • Toast your bread.
  • Cut the seaweed to look like Frankenstein's hair: zig zag on one side and straight on the other.
  • Slice the tomato then cut one round slice in half.
  • Cut or break the pretzel sticks as needed so they are the correct lengths.
  • Scoop out the flesh of the avocado and put it in a bowl. Add a pinch of salt and pepper to taste and smash it with a fork or back of a spoon. Smash it until you reach the desired consistency/smoothness.
  • Take your toast and trim edges if needed to make a rough rectangle.
  • Cut two shallow and small slits on both sides of the bottom edge.
  • Spread your avocado mixture onto your toast. Add the seaweed hair, seaweed eyebrows (if using), olive eyes, pretzel nose, and tomato mouth.
  • Stick a pretzel into a cheese cube to create a bolt. Then insert it into the pre-cut slit.
  • Serve immediately.
