GOLDEN VALLEY, Minn. – Looking for fresh, healthy fare when heading to Target Field? Roots for the Home Team has the solution for you.

Roots for the Home Team founder, registered Dietitian Susan Moores, joined us on KARE Saturday to discuss the organization and share one of their salad recipes.

Roots for the Home Team partners with youth garden programs in ethnically diverse areas of the Twin Cities. They strive to strengthen kids' health through a fresh, positive approach to the healthy eating conversation.

Using their produce as ingredients and their imaginative nature to help develop the recipes, they sell delicious salads at Target Field on Minnesota Twins' weekend home games.

Makes 8 (generous 1-cup) servings


8 ounces wide rice noodles (pad Thai)

1 ½ cups chopped broccoli florets

1 cup chopped radishes

1 cup sweet peas, frozen and thawed, or sliced sugar snap peas

1 cup chopped cucumber, seeded if desired

1/2 cup shelled fresh or frozen edamame

1/3 cup sliced green onions


1/3 cup canola oil

¼ cup rice vinegar

2 tablespoons tamari soy sauce

2 tablespoons honey

2 tablespoons Korean gochujang chile sauce

2 teaspoons toasted sesame oil

4 cups mixed spring salad greens

½ cup chopped roasted and salted cashews

Black sesame seeds, if desired


Break noodles into shorter lengths; cook according to package directions. Rinse with cool water; drain well.

Meanwhile, mix remaining salad ingredients in a large bowl. Stir in cooked noodles.

To make the dressing, whisk oil, vinegar, tamari, honey, gochujang, and sesame oil together in small bowl.

Toss dressing with salad mixture; spoon over mixed greens. Garnish with nuts and sesame seeds.
