Madden's serves up new dining destination

Madden's on Gull Lake debuts new restaurant.

GOLDEN VALLEY, Minn - Madden’s on Gull Lake is eagerly awaiting lakeside perfect temperatures for the debut of their new dining venue. Madden’s is excited to announce their new restaurant Mission Point, opening on May 5. To prepare for new tastes and seasonal dishes, Chef Zane from Mission Point at Madden’s joined us with a preview of a new menu item, Banana Leaf Red Snapper.

Banana Red Snapper

Ingredients:

• Snapper fillet, tail trimmed – 4 each

• Roasted Kernel Corn – 2 cups

• Shallots, diced – 1 cup

• Red pepper, diced – 1 cup

• Garlic, diced – 2 tablespoons

• Okra, frozen – 1 cup

• Parsley, chopped - .25 cups

• Coconut Milk – 1 cup

• Salt and Pepper to taste

• Ancho pepper, chopped, 1 each

• Banana leaf, 10/10

• Butchers String

Trim Snapper. Combine next 8 ingredients in a bowl and set aside. Place I snapper filet in banana leaf, add 1 cup of corn mixture to top filet. Wrap leaf around and tie off with string. Place on the broiler to mark leaf and finish in oven until reaches 155 degrees in the center.
