RECIPE: Chocolate zucchini cake mix from Clover Meadow Bakery

Ingredients to add:

1 Clover Meadow Bakery – Chocolate Zucchini Cake Mix

6 tablespoons of butter or 4 tablespoons of dairy-free butter

1/4 cup milk of choice – dairy, nut, flax, soy or rice

2 eggs or substitute 3 tablespoons of applesauce in place of eggs

1 teaspoon of pure vanilla extract

1/2 teaspoon of orange extract or 1 teaspoon of grated orange rind

1 cup of coarsely shredded fresh zucchini

 

Directions:

Whisk all dry ingredients together in a mixing bowl.  Set aside.

Add all liquid ingredients and zucchini in a mixing bowl and stir together until well blended.

Stir in dry ingredients to liquid and mix until smooth.

 For Cake - Bake in a greased and Rice floured 9” x 9” pan at 350ºF for 30 to 35 minutes, or until your tooth pick inserted comes out clean.

 For Cupcakes – Line 20-24 muffin cups and Bake at 350ºF for 20 - 25 minutes, or until tooth pick inserted in middle comes out clean.

 

*Tip – use cocoa vs. rice flour to tap over the greased pan to keep a rich chocolate color on the bottom of the cake.
