GOLDEN VALLEY, Minn. — Cream Wafers
Dough
1 cup butter
1/3 cup whipping cream
2 cups all-purpose flour
granulated sugar for coating
Filling
¼ cup soft butter
¾ cup powdered sugar
1 tsp vanilla
Red or Green food coloring
To make cookie: combine butter, cream and flour thoroughly, chill 1 hour
Roll out dough 1/8 inch tick on floured pastry cloth. Cut with a roun 1 ½ inch cookie cutter.
Transfer cut circles to wax paper sheet heavily coated with sugar. Turn each cookie to coat both sides. Place on ungreased cookie sheet. Bake in a preheated oven at 375 degrees for 7-9 minutes or until slightly puffy. Cool on wire racks.
To make filling: cream butter, sugar and vanills until well mixed. If desired, tint with food coloring.
Put filling on flat side of one cooled cookie and top with another flat side of a cookie.
Makes about 60 cookies.
