Salmon Salad Stuffed Tomatoes

Minnesota has perfected the locally grown greenhouse tomato.

GOLDEN VALLEY, Minn. - Tomatoes are grown year-round in Minnesota and the team at Bushel Boy Farms in Owatonna, Minnesota has perfected the locally grown greenhouse tomato. Not only are tomatoes grown locally more sweet, juicy and packed with delicious nutrients, but their versatility makes them excellent for recipes.

Salmon Salad Stuffed Tomatoes

Ingredients:

4 Bushel Boy Vine-On Tomatoes

6 to 8 ounces of grilled for pan-fried Salmon (chilled)

¼ cup non-fat

¼ cup light mayonnaise

1 tablespoon of fresh chopped dill

¼ teaspoon of lemon juice

Salt & pepper to taste

A small amount of chopped fresh dill for garnish on top of finished stuffed tomatoes

Instructions:

Cut the tops off of the tomatoes and remove the core

Take a melon scoop and remove as much of the tomato pulp as you can

If you desire, you can remove the seeds and dice the pulp to use in the stuffing

In a small bowl blend the yogurt, mayonnaise, lemon juice and fresh dill

Add the cooked salmon filet and flake it with a fork into the mixture (try not to break salmon up too much)

Add the diced tomato (optional) and blend without breaking salmon up too much

Add the salt and pepper to taste

Stuff the tomato shells with the salmon mixture and garnish with a little chopped fresh dill
