Loaded Veggie Salad with Chickpeas and Black Beans

Serves: 8-10

Time to make: 20 minutes

Ingredients:

15-oz. can black beans, rinsed and drained

15-oz. can chickpeas (garbanzo beans), drained

15-oz. can diced tomatoes

15-oz. can corn, drained

4-oz. can diced green chiles

1 red onion, chopped

1 green bell pepper, seeded and chopped

1 jalapeño pepper, diced (optional)

1/4 cup chopped fresh cilantro

Juice from 2 limes

1/4 cup olive oil

Salt and pepper, to taste

Avocado slices, for topping

Instructions:

Combine all ingredients (minus avocado) in a large bowl. Mix well. Cover and refrigerate until ready to serve. Top with avocado slices just before serving.
