GOLDEN VALLEY, Minn. — Grocery stores and gardens are just beginning to overflow with local sweet corn. And, while we love the classic combination of butter and salt, there are limitless ways you can liven up corn on the cob, and impress your friends and family with your creativity. Terri Chaffer of Love That Olive, Maple Grove, joined us in studio to share a few of the 60-plus suggestions she has for spicing up one of our favorite summer veggies. Recipes:
BBQ Corn on the Cob
Corn on the cob, as many as you need, cleaned
*Grandma Stanley’s Maple BBQ Sauce, *Cherry Jalapeno BBQ Sauce, or *Love That Olive Smokey BBQ Sauce with Real Bacon: Pick one, use as much as desired
Directions:
Brush each cob with sauce and place on prepared grill
Repeat brushing sauce 3-4 times and turning corn
Grill 15-20 minutes until cooked
Honey Glaze Corn on the Cob
5-6 Corn on the Cob, cleaned
¼ C. *Sweet Cream Butter EVOO
2 Tbsp. *Honey Glaze and Rub Seasoning
Directions:
Mix together EVOO and Honey Glaze
Place each corn on tin foil
Pour the glaze mixture over corn and wrap tin foil tightly
Grill 15-20 minutes, turning 3-4 times
Serve hot
Hot Pepper Peach Corn on the Cob
Corn on the cob, as many as you need, cleaned
¼ C. *Hot Pepper Peach Bourbon Sauce
Directions:
Brush each cob and place on prepared grill
Repeat brushing sauce 3-4 times and turning corn
Grill 15-20 minutes until cooked
Crockpot Corn on the Cob
10 ears of corn, cleaned, ends removed, then cut in half
½ C. *Sweet Cream Butter EVOO
Himalayan Sea Salt
¾ C. water
Directions:
Place water in the crock pot
Roll each piece in Sweet Cream Butter EVOO
Sprinkle with Sea Salt and put in crock pot
Cook on High 2-3 hours or on Low 5-8 hours
Drizzle with Sweet Cream Butter EVOO before serving
