Slow cookers can be used to make easy, delicious breakfasts that can be enjoyed at the cabin or at a family reunion this summer. 

They can also be incorporated into weekly meal prep -- slow cooker egg bake reheats well in the microwave and can be a healthy, protein-packed breakfast. 

 Use parchment paper to line the slow cooker. It not only helps with clean up but helps create a more even cooking surface

Here is the recipe from Lindsay Guentzel:

Ingredients:

5 to 6 red potatoes, cleaned and chopped 1lb bacon, cooked and diced 2 cups shredded cheese Veggies of choice, diced 3 scallions, sliced 18 eggs 1 cup milk 1 tbsp garlic powder 1 tbsp onion powder Salt & pepper to taste 3 scallions.

Directions:

 If using bacon or sausage, cook and crumble ahead of time. 

 Grease slow cooker and line with parchment paper. 

 Lay out red potatoes on bottom.  

 Place half of the meat, veggies, scallions and cheese on top of red potatoes.  

 Continue layering, ending with cheese. 

 In medium bowl, whisk together eggs, milk, garlic and onion powder. Add salt and pepper. 

 Pour egg mixture over the top of the slow cooker. 

Place paper towels between lid and slow cooker.  

Cook on low for 7 to 8 hours or on high for 2.5 hours.  

Serving Tips:  

 Have salsa, guacamole, hot sauce on hand for personalization. 

Using the paper towel helps soak up the extra moisture created by the slow cooker.
