MAPLE LAKE, Minn. — Abby Cota knows first hand what it's like to be told you have to change your diet. 

"It’s so hard to have someone say you can’t eat this anymore. It’s scary," Abby says. 

She has multiple food allergies and was diagnosed with celiac disease in 2010. 

She's turned that struggle into a passion for sweets. 

"I want to do this until my hands give out on me," Abby says. 

Abby is the owner of Clover Meadow Bakery in downtown Maple Lake. The bakery is entirely gluten, dairy and peanut free. She also makes vegan products, and is willing to find a recipe that will fit people's needs. "People will come in and bring their list of allergies for us and we will say, 'Yep – we can make you food,'" she says.

Abby makes everything from bread, to cinnamon rolls, to cupcakes, to donuts - even pizza crust. All of it from scratch. 

"Food is the last thing you should have to worry about and sometimes you just want a donut, and you want a cinnamon roll and you want bread," Abby says. "You can come in here and you can have whatever you want and if you can’t have it – guess what – I will work hard to try to make it work for you."

Clover Meadow Bakery is open every Saturday in Maple Lake. You can also find her at the Maple Grove Farmer's Market every Thursday through October. A number of locations also carry her food. You can find a list on the bottom of her website.
