Baked Brie or Camembert in Lefse
Lefse
*Cinnamon EVOO
Brie cheese round or Camembert
*Lingonberry Fruit Spread
Sliced almonds
*Aged White Balsamic vinegar
*LTO Scandinavian Sugar
Directions:

Brush Cinnamon EVOO on bottom and sides of a crock or casserole dish and
on one side of lefse pieces
Layer lefse in crock/casserole dish oiled side up
Remove top rind of brie or chop up bits of leftover brie and other soft
cheeses (great use of leftovers) and place on top of lefse
Top with Lingonberry Spread, sliced almonds and bake in 350˚F. oven until
melted (careful not to burn almonds) approximately 15 minutes
Finish with Aged White Balsamic and sprinkle of Scandinavian Sugar
Use corners of lefse for chips. Can make more by baking lefse that has been
brushed with EVOO and cut into triangles

Scandinavian Almond Cake
Beat well: 1 ¼ C. sugar, 1 egg, 1 ½ tsp. almond extract, 2/3 C. milk
Add: 1¼ C. flour, plus 1 Tbsp. for flouring pan, ½ tsp. baking powder
Add: ½ C. *Vanilla EVOO, beat mixture well
Prepare the pan by spraying *LTO olive oil spray and flouring well
immediately before pouring batter into pan.
Bake at 350°F. for 40-50 minutes until edges are golden brown and toothpick
inserted into center comes out clean.
