Watermelon recipes sliced a whole new way

Lisa O’Connell of Sauce Anna Lisa joined us with some delicious and simple ways to serve watermelon. Never know what to do with all the leftover melon from that party or just the overwhelming amount of fruit these melons can give? Lisa shows how to pick, cut and serve this quintessential summer fruit, in some delicious fresh and simple ways.

Watermelon salsa

½ Watermelon, diced

½ Red onion, diced

½ Bell pepper, diced

1 Cucumber, peeled, diced

1-2 Jalapeno, seeded, diced

¼ Cup chopped fresh basil or cilantro

2 Limes, juice only

1 Tablespoon honey, agave or other sweetener

1 Teaspoon salt

Combine melon, onion, pepper, cucumber, jalapeno and basil or cilantro. In a small bowl whisk together the lime juice, honey and salt. Combine all ingredients with dressing and toss to coat evenly. Serve with toasted corn chips or fresh tortillas. This fresh summer salsa is also great served with grilled fish or chicken.

Watermelon and Arugula salad

¼ Watermelon, diced

6 oz Arugula leaves (1 bag)

3-4 Tablespoons goat or feta cheese

3 Tablespoons toasted walnuts or almonds

Balsamic glaze

Salt and fresh cracked pepper to taste

Place arugula leaves on platter; toss watermelon pieces and chunks of cheese throughout, dispersing evenly on greens. Top greens with toasted walnuts and drizzle with balsamic glaze. Finish with fresh sea salt and cracked black pepper. Serve immediately.

Watermelon Bruschetta

1 baguette toasted, sliced

½ Watermelon, diced

6 oz goat cheese

1 bunch fresh basil leaves, chopped

Balsamic glaze

Kosher salt, cracked black pepper

Spread goat cheese on baguette pieces, top with watermelon pieces and finish with shreds of basil. Drizzle with olive oil and balsamic glaze. Sprinkle finished baguette with kosher salt and fresh cracked pepper.

Watermelon Granita

½ Watermelon, diced

¼ Cup sugar

Juice of 1 lemon or lime

Remove rind of melon, slice into cubes. Combine melon, sugar and lemon or lime juice into food processor or blender, puree until smooth. Pour blended ingredients into freezer safe pan and freeze for 2-4 hours until frozen. To serve, rake frozen melon with fork or spoon and serve in a cup or small bowl, garnish with sprig of fresh mint.
