Pizzeria Lola opened in 2011, and Hello Pizza in 2013. Kim later opened Young Joni in 2016. It was recognized as a top restaurant in the country by GQ and Eater.com.
Kim was nominated for her first James Beard Award in 2018 and will attend the ceremony in Chicago on May 7.
RECIPE for Grilled Korean Short Ribs
3 lbs. flanken style Korean short ribs
7 garlic cloves
1 Asian pear
1/2 cup sugar
1.5 cups low sodium soy sauce
1/2 Tbsp. black pepper
1/4 cup sesame oil
Peel and slice Asian pear and puree in food processor with garlic cloves. Add sugar, soy sauce, sesame oil and black pepper. Mix until incorporated. Pour marinade over short ribs until fully covered and marinate at least 3 hours or overnight. Heat grill and cook 2 - 3 minutes on each side or to desired doneness.
Enjoy hot off the grill with rice and kimchi!
