Sunrise cooks up a tater tot hotdish

Our producer Beth shares her delicious hotdish recipe.

GOLDEN VALLEY, Minn. -- There's nothing better than a delicious tater tot hotdish. In honor of the eighth annual Minnesota Congressional Delegation Hotdish Competition, in Washington, D.C. Wednesday, Sunrise cooked up a hotdish of our own!

This recipe is from our producer Beth!

Ingredients:

  • 1lb ground beef
  • 1 big package of tater tots (1 pound or more if you want to bake the extra tots on the side)
  • 2 cans condensed cream of mushroom soup
  • 1 can sweet corn
  • 1 can green beans

Directions:

  1. Pre-heat oven to 350 degrees.
  2. Brown the ground beef – add seasoning, salt pepper, garlic -- and drain off the grease.
  3. Spread the beef in the bottom of a baking dish - smaller if you prefer a deeper hot dish!
  4. Drain the liquid off the vegetables and spread them over the meat.
  5. Spread the cans of soup over the top of the vegetables and meat.
  6. Arrange a layer of tater tots over the top of that.
  7. Bake, uncovered, at 350 degrees for 50 minutes.
  8. You can top with cheese, or nothing (recommended with a bit of ketchup on the side)
