Alicia's Chocolate Turtle Recipe

These chocolate caramel turtles are easy to make, fun to eat, and make for wonderful holiday gifts.

GOLDEN VALLEY, Minn. - These chocolate caramel turtles are easy to make, fun to eat, and make for wonderful holiday gifts. You may have heard me talk about my mom, a.k.a. "Mama Lew," on KARE 11 Sunrise. She and I created this recipe many years ago and have been making these tasty turtles every year!

The difference with my turtles is that they are not your typical stick-to-your-teeth chewy caramel turtles. They are gooey caramel turtles and the secret is that I use Dove Chocolates with Caramel.

I package my turtles into cute gift boxes to give to family and friends, and every year am asked, "How did you make these Alicia?" because well... they are a HIT!

I have never told any one or shared the recipe (even with my own cute grandmother) until now!

Here is what you'll need:

  • 1 bag of Dove Chocolate with Caramel (30 chocolates per bag). Depending on how many turtles you plan to make.
  • A bag or container of cashews already halved or whole. If you get the whole cashews you will have to break them in half.
  • 2 baking sheets
  • A roll of parchment paper
  • Gift boxes (optional)
  • Ribbon (optional)

Step 1: Preheat the oven to 200 degrees.

Step 2: Place a sheet of parchment paper onto your baking sheet

Step 3: Arrange the halved cashews on parchment paper in the shape of a turtle (4 pieces) use a broken piece for the turtle's head.

Step 4: Once turtles are arranged on the sheet, place Dove Chocolates on top on the cashews. This is the "turtle shell".

Place the Dove Chocolate witih Caramel on top of the turtle-shaped cashews.

Step 5: Once all of the turtles are in place, carefully place turtles in the oven for roughly 3 minutes. The chocolate will look glossy and begin to melt. **NOTE** You don't want to leave them in the oven too long because the caramel inside will ooze everywhere or the chocolate will burn.

Step 6: Once turtles are out of the oven, gently spread the chocolate around the cashews so it sticks to the nuts. **NOTE** don't press too hard because the caramel may ooze out! You can add sea salt on top if you'd like.

Step 7: Place in fridge until chocolate is completely cooled roughly 30 minutes.

Step 8: Cut parchment paper to fit gift box shape and place turtles in box layering them.

Step 9: Seal the box and finish it off with a bow or a ribbon!
