Executive Chef and owner Mike Rakun shared his take on the classic Eggs Benedict.
1 ea English muffin, toasted
2 tbsp avocado mousse
½ cup spinach
½ tsp garlic, chopped
2 tbsp tomato confit
4 ea pickled fresno chilis, sliced
1 tsp lemon juice
to taste salt
2 ea poached eggs
1 tsp green onion, sliced
Toast English muffin and smear with avocado mousse
Saute spinach with garlic and tomato, season with lemon juice and salt
Place poached eggs on top of English muffin and garnish with fresno and green onion
